My most memorable wedding has to be one of the smallest I've done! It was at Falling Foss near Whitby which is this lovely outdoor forest complete with the most beautiful waterfall. Think very green and very quaint. Kate my beautiful boho bride had a huge oversized bouquet of wildflowers and used edible fresh flowers in an array of bright colours that really popped. Kate and Chris were a dream couple to work with - they chose a wedding that was completely them through and through and the rustic, botanical vibe was simply stunning and so different to any other wedding I've been a part of.

My late grandmother taught me how to bake from a young age - I set up the business in memory of her. She never knew that this was what I'd end up doing and thinking of baking her signature 'Grandma's chocolate cake' but encased in one of my wedding cakes I know she would be so proud - which makes me proud!

Book early! Do your research, find suppliers that you love and put down a deposit. I have reserved dates over 2 years in advance and it's always horrible to have to turn couples away, who really want to use you, as I'm fully booked. Lots of people think their wedding is ages away and it's too early to book but in most cases it really isn't!

I love the photo charms of lost loved ones that you can attach to your bouquet. I know I'll be definitely incorporating them into my wedding and having my grandparents walking down the aisle with me in a different way.

I usally begin with a cake consultstion. I wanted to give brides and grooms the full wedding cake experience so as part of the consultation I encourage couples to bring their ideas to the table. They can sample up to four different flavours for a maximum of four guests per tasting. Whilst trying the cakes, we run through design concepts together – what couples like, don’t like, colour schemes, themes and pictures of cakes they love. In the brides case Pinterest usually makes an appearance and I offer suggestions of what will work well from a design point of view – together we come up with a cake that is perfect for their big day. I really do love the personal approach and having the bride and grooms input makes their cake even more special. Following the consultation I require a 50% deposit to secure the date but any changes can be made up to a month before the wedding. Some couples come for a cup of tea closer to the time to finalise details if this is what they prefer. The it's bake, fill and ganache, fondant, decorate, deliver and set up for the big day!

My signature flavour would have to be 'Grandma's chocolate cake' as it was such a firm favourite in our house growing up. Otherwise, Red Velvet and salted caramel was a flavour I trialled when I first set up the business, which so many brides and grooms love it's a little different but works so well! Design wise I'd say my signature style would include sugarflowers and most likely ruffles. I love working with different textures and creating show stopping pieces that people remember!

One of my couples had a carnival style wedding and wanted pinwheels incorporated in with the sugar flowers on the cake. To begin with I had no idea how the cake would turn out but it worked a treat and that cake is still one of my favourites to date!

My Grandma taught me how to bake as a child and I always found baking a form of stress relief. When my career path wasn't going the way I wanted it too I thought I needed a hobby and two things I loved were baking and weddings. I did a 5 day wedding cake class in London and the rest was history.

Ooh it would have to be a 5 tier monster of a cake with ruffles, bas-relief, maybe gold leaf or marbling effect and of course lots of sugarflowers!
