We catered and managed an incredible 'fair' inspired wedding in a field in east sussex, complete with coconut shys, hoopla and hook-a-ducks, on one of the hottest days of the year! Menu-wise they went for a picnic on each table, with baskets, all the chutneys & pickles you can imagine and huge wedges of cheese, followed by a build your own eton-mess station with colourful meringues! Great fun had by all and so much personality in each element of their day.

I love it when couples make their own favours for guests, be it homemade gin or jam - people do take them with them if they are personally made!
From the first email, we'll strive to understand a clients vision for the day. Some couples like the look of our set menus, some want something a little more bespoke for the day, we'll create menus at this stage and do a rough quote based on guest numbers and food/drink choices. In the year of the wedding itself, we'll hold a tasting for our couples (complimentary once booked) so they can choose their options for the day, we'll start planning timings at this stage and over the following months bring together all the plans for the day. If its a marquee or a rural venue we'll do a site visit if we can, and we'll always be at the venue the day before to set up. On the event day we'll be at the venue at least 2 hours before guests arrive and we'll run the day using all the plans we've made over the last few months!
I would say our Smoked Duck Breast Salad, Chard Courgettes, Pesto Dressing, Blush Tomato starter dish would go down with the judges, its just so colourful and pretty on a plate and of course, tastes delightful!
Not so much a dish....more of a drink! We had a couple who wanted a portuguese menu for their big day, complete with 'poncha' a traditional madeiran toast drink! I went on holiday to Madeira before their wedding, and of course after much 'research' came up with a great recipe which we re-created on the day for them!

Just a little seasoning makes everything taste better....sriracha has been a firm favourite with the chefs this year!
