That's a tough one... each special occasion has it's own character, the best weddings are the ones where our couples push the boundaries of what's normal or expected. In that sense, I'm hoping that my own wedding to Helen next year will be become our most memorable!

I like to meet couples in person as soon as I can. It's so important to get to know the people you may be working for. Once I've had a chance to get the big picture from you I can then set about creating a personalised menu to fit your tastes. From there it's all down to good prompt communication and taking full advantage of lots of handy planning tools. We hold consultations. site visits and tastings before the big day and work tirelessly to get all the fine details arranged.
Our multi-award winning Head Chef Craig Gibb has already won best main course at the Scottish Culinary championships beating a former Masterchef: The Professionals Winner in the process... I think I'd just send Craig, he's Event Chef of the Year 2016!
We had a particular couple whose parents seem to have made all the foodie decisions for them. I could tell they wanted to be more involved but they felt they needed to let the "Folks" have their say as they were the ones paying. I took the couple to the pub and asked them what their favorite sweet or chocolate was. In sync they said "Terry's Chocolate Orange". Knowing this I set about creating an assiette of Chocolate and Citrus fruits with the centre piece being a Spherification of Chocolate covered Grand Marnier Ice cream (we make our own ice cream). It was a special feeling when the Bride and Groom enjoyed a private moment in realising the centerpiece of their very posh looking dessert was a delicious chocolatey orange sphere... a bit like a Terry's chocolate orange.
Time and patience - put as much care and attention into your relationships as you would into your favorite dish and vice versa.
Passion - you can tell when someone is going through the motions when they cook. It's worth spending time on packing flavour into stocks and sauces made from scratch.
